Starting March 11, 2020, new wikis use the Unified Community Platform (UCP). Fandom has also started to convert some older wikis to UCP. UCP wikis currently have modified functionality, and are missing some legacy features. Fandom is continuing to work on adding/porting some missing features. It isn't a bug or a missing feature, they purposely made it so poll options can't be changed. This is so that the author can't change the options after people have voted. For example, if someone was holding a vote for new admin, the author can just change it so that someone of their choice "wins". Hope you understand.

FYI, it is not just polls that get locked. All Feeds-based discussion features (currently Discussions and new Message Walls) lock posts after a certain amount of time. It is a general change Fandom made to prevent issue like the one Sidemen19 mentioned. That said, users with discussion moderator rights or higher are not subject to this time limit and can edit other users' posts. However, if a poll gets edited, the vote counts reset.
