If one server goes down, then a different server will handle pages.
There are multiple servers in different areas - what are the chances all of them somehow get destroyed?
There may be other wiki hosts that will provide a protected website or give you the tools (like this) to protect it.

After a quick review of the situation, the admin did nothing wrong. You had removed a large part of the article, and the admin was undoing it. You shouldn't remove a large part of an article without any permission whatsoever, it'll be viewed as vandalism. As for chat, I highly doubt that it went the way you said. You were blocked for rudeness and profanity, which I'd rather accept as the official story (by an admin with over 40,000 edits) than a new(er) user with 5.
EDIT: Removing that message from his talk page was a pretty poor move by the admin.
