If you don’t want anyone to edit pages you can lock pages so only you, admins and mods of your wiki can edit it.

That wouldn’t be a good choice considering how users will eventually find the wiki and will be disappointed to see that all of the pages are locked from editing.
Ya that to, but you can lock some pages then unlock them when your finised.

I'll just try as hard as I can to fill my empty wiki as soon as possible then, but still thanks for the replies you give me, I really appreciated it! ^^
Wikis are collaborative projects, so if you want to build it up, you should spend some time trying to attract some editors to help build it up.

As a side note, there are plenty of incomplete wikis out there. You could leave a visible message on the home page and other unfinished pages notifying anyone who stumbles by that "the page/wiki is incomplete, you can help by expanding it".
That's another thing to note - because wikis are public, anyone who comes by can help you expand the content, as opposed to your initial idea of cornering yourself off and doing everything yourself. But yeah, good luck, gotta start filling that wiki then.
