Hey, you can't install extensions. You need to ask staff to install them via Special:Contact/general.
However, with regards to the variable extension, is this the one you're talking about? If so, all Wikia wikis already have it. - Edit: I'm an idiot, see below :)
I have had to ask for the variables extension to be enabled on every wiki I contribute to. If it is indeed enabled by default now, I would guess that it is for new wikis only, and I would also guess that this change is somewhat recent. Depending on how long the OP's wiki has been around, it may not be enabled there by default.
I looked at some new wikis and it doesn't appear to be enabled by default. You can check it on Special:Version if you have to.
That said, Lua templates (enabled by default) are almost always a better option than the variables extension. Perhaps if you explain what you want to use the variables for, someone could see if it's better off in Lua.

I only checked Special:Version at community, assuming it would be the same across the whole of Wikia. Whoops.

Yeah, I already checked and it wasn't in the Versions. The reason why I wanted the variables extension was so I could make things cleaner but I will take a look at the Lua template. Thanks
