I'm not an admin on this one wiki, and I have a message wall greeting there. I want to protect it so that no one but me can edit, but the closest protection is so only admins can edit. Now what?

Then it's simple: only you and administrators may edit your message wall greeting.

Wikis are meant to be publicly viewable and editable projects, so setting one so only admins may contribute to the content is not allowed. You may restrict anonymous users from editing via your wiki's Special:WikiFeatures page, however.
In addition, this is a fairly old thread, so in the future, creating a new one would be best. :)
Then you bring it up on the page's talk page, or in the comment section. Alternatively, notify an admin.
Edit: also, create a new post rather than reviving an old thread.
If you are an admin on a wiki, you could lock it and still edit it, but if you are not, then a lock would also lock you out.
But preferably, you don't. Vandalism is easily reverted. Unless something is a high profile page or structure template, there's no real need to protect anything a priori.
You should'nt really lock every page. That's not really the point of a Wiki.
