As you know, when a page that's set to redirect is on a category, the "thumbnail" shows text even if there's an image in the redirect page somewhere. Is it possible to have the categories "show" those images instead of redirect text?

You can use Template:Softredirect instead of a redirect, and add some content below.
Technically, you can just add an image under the hard redirect. It's a bit a maintenance issue - as you'd have to manually update the image if it changes, but as you appear to be categorising redirects anyway, I think it'll be fine.
I've just tried both ways. However, I'm still getting redirect texts instead of images.
Just in case you were wondering, we're planning on using the redirects for components of whatever's on the page, hence the categorizing.

Please be patient - it takes a while for the server cache to clear. It could take a few days for the changes to filter through.
To elaborate further, both methods suggested will work given time. It is just a choice of which method to go forward with. Both have their advantages.
