Is it possible to customize the options so that instead of say "standard layout" and "blank page", we can have other wiki-specific layouts?- such as maybe "episode page layout", "character page layout" etc.

I don't believe CreatePage supports it. If you have any JavaScript developers on your wiki then you can hack something together by adding extra options to the CreatePage UI and intercepting the submit.
If that was impossible to understand, you're probably better off editing your community portal and using CreateBox widgets instead like this:
<createbox> preload=Template:DefaultLayouts/Episode buttonlabel=Create a New Episode Page prefix=Episode: width=50 </createbox> <createbox> preload=Template:DefaultLayouts/Character buttonlabel=Create a New Character Page width=50 </createbox> ... etc ...
Then you just create your default layouts at Template:DefaultLayouts/Episode
and so on to match the create boxes. The result looks like this:
I found a fix. Preloaded a bunch of staple pages at our MediaWiki:Newarticletext page.
You've got a little bit of a problem in that one-third of your list isn't immediately viewable. In my experience, most users — especially new ones — won't at all think to expand the notification box.
A javascript solution, such as devised by Grunny at w:c:starwars, would be a bit more elegant.
Oh I see! Basically you have to copy the relevant parts of starwars:MediaWiki:Wikia.js and starwars:MediaWiki:Common.js and put them into the same locations on your wiki. (The "relevant parts" are all pretty well labelled.)
Then you have to start something like starwars:template:stdpreloads.
Then you have to put all your existing preloads into new templates that follow the nomenclature of "Template:Templatename/preload".
To understand how it works — from a user's perspective — go to tardis:T:PRE.
